The Best Hand (Immersion) Blenders | Serious Eats

An immersion dye , blender stick , blower blower , hand blender , or Bermixer (After the brand name professional models made by Dito-Electrolux) are kitchen knife grinders used to blend fancy materials or food in containers where they are being prepared. The immersion blender was invented in Switzerland by Roger Perrinjaquet, who patented the idea on March 6, 1950. He called the new tool "bamix", a portmanteau of French "batere et mixe" (beat and mix). The larger immersion blenders for commercial use are sometimes dubbed boat motors (popularized by Emeril Lagasse and Alton Brown). Usage includes soup purà © and emulsifier.

The stick blender consists of an electric motor that drives a rotating blade at the end of the shaft that can be immersed into mixed food, in a hand-held housing. Some can be used when the pot is on the stove. Immersion blenders are distinguished from laboratory blenders and food processors requiring food to be placed in special vessels for processing. They are distinguished from the hand mixer, which mix but not cut.

Models for home and light commercial use typically have an immersible shaft length of about 16 cm (6.3 inches), but the heavy duty commercial model is available with shafts up to 53 cm (21 inches) or more. Home models are available in wired or wireless versions. Motor power ratings range from about 120 W to over 600 W for heavy duty models. Domestic models can be provided with trophies or other accessories.
