The holy trinity , Cajun Holy Trinity , or the sacred trinity of Cajun cooking consists of onions, peppers and celery, the basis for much of the cooking in regional cuisine Louisiana. Preparation of Cajun/Creole dishes such as crawfish ÃÆ' à © touffÃÆ' à © e, gumbo, and jambalaya all start from this base.
Variants use garlic, parsley, or onion in addition to the three trinity materials.
Holy Trinity is a Cajun and Louisiana Creole variant of mirepoix; Traditional mirepoix is ââtwo parts of onion, one carrot piece, and one part celery, while the sacred trinity is usually the same size of three ingredients or two parts of onion, one part celery, and one part green pepper.

This name is a reference to the Christian doctrine of the Trinity: Louisiana (especially the Acadiana region) is a strong Roman Catholic region.
The term was first proven in 1981 and probably popularized by Paul Prudhomme.
