Bacon vodka is a vodka infused with bacon flavor, part of a larger "carnivorous cocktail" trend and the addition of a savory taste to a mixed drink. The infused alcohol can be shaken but is usually used in mixed drinks like Bloody Mary or bacon martini.

Drinks put into meat are not new to the world of cocktails; one such example is "Bull Shot" at Ernest Hemingway's favorite, Harry's Bar, in Venice, Italy, in the 1940s. This type of drink has been referenced by writers as far back as the 17th century, including by John Locke and Samuel Pepys, who absorb and write about brewed brewed beer. A number of bars and mixologists have been making bacon or other liquors for years, including the Double Down Saloon in Las Vegas and New York, which has been famous for their "Bacon Martini" for more than a decade, Smirnoff has also started shooting bacon flavors in some bars and pubs, unlike some, this is vegetarian friendly. Bacon and other meat-containing cocaine have recently begun to enjoy a wider appeal because mixing experts have noted that "meat raises the whiskey smokiness [and other cocktail combinations]". The main interest in bacon vodka is further fueled by the pop-cultural interest in bacon, often called bacon mania.
In April 2009, Seattle-based Black Rock Spirits released a commercial version of vodka bacon-infused, known as "Bakon Vodka". Vodka was the result of two years of testing. Vodka Black Rock is a potato-based spirits, created using a single heating process of column distillation in an attempt to keep the alcohol from "bruising". Black Rock Spirits has reported it has been commercially successful to date, expanding production on demand.

Bakon Vodka has since received critical acclaim from professional mixing experts, winning the 2010 Silver Medal prize in the Wine and Spirits category at the World Beverage BevStar Awards and Silver Medal in the International Spirit Competition of SIP Awards 2010. In November 2010, Bakon Vodka was awarded the medal Gold and rated "92 points - Extraordinary" by the International Expert Reviews from the Drink Testing Institute.
Bakon is also featured on a number of TV programs including The Tonight Show with Conan O'Brien The Tonight Show with Jay Leno and The Today Show .
Homemade version
Bacon-scented vodka infusion can be made by pouring 120 g (4 oz) bacon fat in 750 ml (one fifth) vodka, constantly stirring, freezing and then lifting fat from above. This process is known as 'fat washing'.
Drink
Black Rock Spirits, the Bakon maker recommends inhaling vodka rather than drinking it because of the strong smoke flavor. In mixed drinks, the most popular recipe is the Bakon Vodka mainstay cocktail, a variation on Bloody Mary called "Bakon Mary", in which the traditional vodka is replaced with Bakon Vodka. The Bakon Caesar, popular in Canada, is a variation of Bloody Mary that uses Clamato or clam broth.
The creation of Bakon Vodka has inspired the bartender to make a number of cocktails based on the infusion, where smoke and umami flavor accented with more traditional flavors. Popular drinks with Bakon Vodka include Bakon Martini, Russian Bakon (similar to White Russian) and Bakon-Chocolate Martini. It can also be used in marinade for meat such as steak, or directly in Bakon-Vodka Oyster Shooter.
